This is a ridiculously easy and quick recipe for a healthy chicken salad which I like to serve in a whole wheat pita with slices of avocado. Simple and easy to take on the go, this chicken salad is bound to become a staple in your house like it has in mine! Big thank you to my dear friend Melody C. for sharing this gem with me.
Ingredients (I usually buy everything at Trader Joe’s to make it easier) – Makes 4-6 pita sandwiches depending on how much you stuff them
1 can of chunky white chicken, drained
1/3 cup fat free balsamic dressing
1/2 cup chopped green onions
1/2 cup chopped dried cranberries and/or nuts
1/2 an avocado sliced for garnish
10 small cherry tomatoes, halved
Whole wheat pita
Salt & pepper to taste
Add mustard if you want an extra kick!
The (very few) steps:
1. Remove the chicken from the can and drain all the juice out.
2. In a large mixing bowl, combine the chicken with the chopped green onions, halved cherry tomatoes, dried berries and nuts.
3. Add the balsamic dressing into the mix while stirring.
4. Sample and add salt/pepper to taste.
5.. Spread in a pita pocket, then add avocado slices on top for garnish.
